I started this pork last night. I used a combination of hickory and apple. I smoked it for roughly 11 hours. No wrap. It taste really good. Serving it tonight as a free dinner at my lodge and taking the other half to a friend's work, because the workers spoil my dog there. Its a doggie day care

    I was going to forgive it it looked good opened up but you can tell from the shredded pics that there is absolutely no fat, no moisture left. The best part of the pork has been squeezed and wrung out of the contracted overcooked pork.

    Looks kind of dry. Probably overcooked.
    Personally, I’d do 4-5 hours on the smoker and finish in the oven.

    Screw all the neigh sayers. I think it looks damn good. A touch dry but that is what sauce is for.

    I truly think it’s good looking, the biggest complaint I have for pulled pork is excess fat. I think this is fucking awesome.
